The green, unripe Ume plums are selected and cleaned manually by Tokos Kurabito (brewers). The aroma is incredibly fine with notes of white flowers and almonds. It is a balanced taste with a refreshing, restrained sweetness. The bubbles are ultra fine and give a soft mouth feel, as in good cider.
