We have been working with the brewery for a little over two years and have built a close relationship with Daijiro sake and with Daijiro san, the master brewer. It is a small brewery with a team of only three brewers, who grow their own rice, use older brewing methods, make washi paper for their bottle \u003cmeta charset=\"utf-8\"\u003elabels, out of plant fibers from their rice harvest. But it is the taste of their sake that stops time for us. True to the Shiga region's preference for flavorful sake, tea and food, Hata shuzo brews a full-bodied, rich and nourishing sake. Look forward to an expansive tasting with a varied program that cannot be found outside of Shiga prefecture.
